Church Lady Flan

 

 I made this and a Puerto Rican detective friend tried it and said, don't tell his Buelah, but this is the best flan he ever had in his life. I got the recipe from Daisy Martinez. I watched her cooking show on pbs years ago and bought her book.  She is wonderful. You can find her on you tube.  

She said this was sold outside of her church on any given Sunday. 

Media Crema from Nestle is the secret to a good flan. She was given that advice from one of the church ladies. You CAN use sour cream in its place, but don't do that.  It won't be this good with sour cream.


Ingredients:

1 C sugar


One 12 oz can of evaporated milk

One 14 oz can of sweetened condensed milk

3/4 C whole milk (farm fresh, raw is what I use)

3 large eggs

3 egg yolks

2 vanilla extract

1 cup Nestle media Crema, or sour cream


Preheat oven to 350°F

Have a glass pie pan ready. 

1.  First, to make the caramel, pour the 1 C sugar into small saucepan. Set burner to medium-low heat, and let the sugar start to liquify, and form clumps.  Stir slowly and constantly, using wooden spoon. This process is tedious but do not turn up the burner and stir until it is liquid and the color of a copper penny.

Pour carefully and quickly into pie plate and immediately tilt around to cover the whole bottom of the pie plate.  Careful. This is very hot thick liquid and will burn you badly. It will harden up quickly too.

Start a teapot of water for the next step.

2 Combine, evaporated milk, milk, condensed milk, eggs, yolks and vanilla. Blend on low for a few seconds to combine eggs. Stop and add media crema  and blend a few more seconds.  Let it stand a minute or two, then skimoff some of the foam. 

3. Put baking pan on oven rack, and place pie plate with caramel on it in the baking pan. Pour the custard mix into the pie plate and carefully pour the boiling water around the pie plate, into the baking pan. Water should come halfway up the side of the plate. 

4. Bake one hour, until custard is set in the middle.  Remove from oven and keep in the water bath unti it cools completely, Refrigerate for at least 3 hours and up to one day.

To serve:

Put serving platter with edges, over pie plate and flip.  Let flat fall onto platter from pie plate. There will be caramel liquid, so having edges on platter is necessary. 

Slice and serve.  




I should have better pics of this, but I don't.  Doing this blog post was an afterthought and I wanted to be sure my kids knew this recipe, in case they need it.  I put a lot of my recipes on my blog mostly for my kids, to have a record of the foods I love but also for anyone who wants to try them out.

Roman Delight - my five minute keto pizza substitute

  I call this my Roman Delight. It satisfies my craving for pizza, quickly  



Olive oil

Provolone cheese

Favorite spices

I oiled my stainless steel sheet pan and threw 6 slices of provolone cheese on it.

I drizzled olive oil on top and rubbed it around on the cheese and added my spices.

I used crushed red pepper, oregano, marjoram, and granulated garlic  


I would have used fresh garlic, but I was out of it.you can top it with whatever you like, including pepperoni

I baked it at 350° for about five minutes just keep an eye on it.

Let it rest a few minutes before you eat it

Simple Vegetable Cream Cheese for bagels and crackers and cucumbers

Vegetable Cream Cheese



This is a simple recipe I am putting out here for anyone who has never made it.
This is excellent spread on an Asiago, spinach, or everything bagels or any savory bagel you like. Eat it with your favorite crackers. 
You can also eat it with cucumber slices if you are trying to eat healthy.
Mix together: 

1 packet of softened cream cheese
George Washington Seasoning, Golden
Sour cream
then add: 
any veggies:
 Bell Peppers
Poblano/Jalapeno Peppers
Red onion
Garlic
carrots
mushrooms
celery
broccoli

All ingredients are optional, add the veggies and seasonings that you like and run with this. I make it different almost every time. I even add in Helluva Good Dip to make the cream cheese easier to spread.  Any sour cream will do also. 

You can make your vegetable chunks as small or large as you like and use any crunchy vegetable.
I will tell you, the larger the chunk, the longer it will keep in the refrigerator.

Chop up your veggies with a  food chopper or the manual food processor and mix with softened cream cheese and back in the cold box it goes.
These products save you a ton of time in the kitchen.

I can share it now because I gave most of them out. There’s still a few of you that haven’t gotten them yet, but I will get it to you when I see you. 

I have made homemade gifts for years. I slacked off for a year or two, but I am back at it. 


Pretty simple. Walnut shell, wooden bead, wooden star, jute string, and Muslin fabric and a hot glue gun.

What happened to canned copes corn?


 My family loves copes corn and we traditionally eat it every Thanksgiving.

It’s not for everyone in fact my husband the first time he came to our family dinner when I met him asked what was wrong with the corn lol. I guess his family didn’t know the tradition. 

Anyway my mother contacted Hanover foods who is the maker of the canned copse corn and they said they have been shortstaffed since coronavirus so they had to stop production. They are unsure whether or not they will continue the production but they did supply her with this recipe to make the bagged dried copes corn taste like the traditional canned.

Sausage Poblano Pumpkin Bisque

I have my Sausage Poblano Pumpkin Bisque Recipe on my other blog.  I have a newer blog. 
It's fast to make and really easy.

Sausage Poblano Pumpkin Bisque

2 pounds sausage (casing removed it it has any)
2 poblano peppers, chopped
7 cloves garlic, chopped

4 cups chicken bone broth
1 block cream cheese
1 26oz can pumpkin

a few dashes of dried Sage
a dash of pumpkin pie spice
a few dashes of ground dried ginger
Salt and pepper

Brown sausage with poblanos and garlic in a stockpot.

Meanwhile, in a Vitamix, blender or with a hand mixer if you don't have one:
broth
cream cheese
pumpkin
(you could probably melt the cream cheese in the soup but this is faster)

Whirl until well blended.

Pour over soup and cook until hot.
Add spices.

Pressure Cooker Lasagna 5 Minutes Prep time!

This recipe is now on my new blog but I will share it here also. 
Instant Pot, Pressure Cooker, Quick Cooker..they are all the same thing.
This blog post is a long time coming!  Just get a 6-inch springform pan (Wilton makes one and you can use a coupon at Michaels), or use a pressure cooker safe casserole dish that fits your pressure cooker.
I have made this in my Wolfgang Puck pressure cooker, my instant pot, and my Pampered Chef Quick Cooker.  The Pampered Chef has a nice grey stoneware casserole that fits the quick cooker.  I stopped selling Pampered Chef after years of selling but I still love the products. I did not use no boil noodles, just basic dry lasagna noodles.
Pressure Cooker Lasagna

Note: I used a 6″ springform pan and all ingredients were raw. 

Ingredients:
Dry lasagna noodles
pasta sauce
Ricotta cheese
Shredded Mozzarella

parmesan cheese
optional:
Ground Italian sausage
Fresh mushrooms

Kale or collard greens or spinach

Prepare springform pan with olive oil spray or similar.

Break down lasagna noodles to fit bottom one layer. Add a layer of ricotta and couple of spoonfuls of pasta sauce.

Break down ground sausage into small pieces and add a layer. Add your mushrooms or spinach, etc. Top with shredded cheeses and sliced fresh mushrooms.

Top with lasagna noodles (broken to fit) and begin again, about 3 layers total depending on the depth of your pan. Top with sauce, mozzarella, and parmesan cheese.

Cover with aluminum foil. Place on trivet in IP with 1.5 cups water. Cook 20 mins on high pressure. Let the pressure come down on its own for 20 minutes'.

Let sit 10 mins before removing sides of pan and serving.


You can play with this and use more ingredients, such as eggs and pesto in your ricotta like in traditional recipes.  This is just a basic fast recipe...go ahead and run with it.  I make my own noodles and ricotta cheese  and lasagna noodles that my family loves but in a pinch, this is a quick meal that doesn't heat up the kitchen. Have yard work to do? Drop this in the pressure cooker and go get it done.

Bone Broth Avozpacho Soup


Its been awhile. and I haven't totally abandoned this blog, but I do have another blog going and I am busy with schooling and building a deck, ballroom dance lessons, family,  etc so I have been slacking in the blogging side of my life but here is a recipe I made last month and just adore.

I will be back to blog more. My www.shannonpickle.com blog is focusing on more healthy options for now. I have not given up on sweets totally and I will be back to post some recipes in a bit.

White Light Meditation: A healing visualization


White Light
a healing visualization meditation


White light is considered a cleansing, healing light. Filling yourself with this light is a helpful way to access this healing energy. Using this visualization, you can direct your breath to the areas of the body that are in need of healing. Whether there is a specific spot in your body that is painful or whether you are healing from cancer, this is incredibly beneficial tool.  Cancer cells are specifically mentioned here, but feel free to use it anywhere, anytime you feel inclined.

1.       Lie down or come to a comfortable seated position either in a chair or on the floor. Feel free to use a blanket under your bottom for comfort and/or sit against the wall for back support.  One you are comfortable, close your eyes and direct your attention inward.
2.       Visualize where the cancer cells/pains are in your body
3.       See the white light enveloping the cancer cells/pains and eradicating any trace of them.
4.       Follow the white light as it travels around, eradicating any cancer cells/pains it finds, enveloping them with the light and moving on to the next spot.
5.       Continue to do this until you feel you have gotten to every possible cancer cell/pain that is in your body.
6.       Try to do this visualization technique for five minutes, and gradually build up to a half-an-hour.

Salted Chocolate Brownie Treats....a 3 ingredient healthy brownie bite

These take about 20 mins to make and you only need 3 ingredients that you probably have on hand.
Bananas, Peanut Butter and Cocoa...oh and alittle sea salt.




Salted Chocolate Brownie Treats 

Makes about 16 treats

3 bananas
1/2 C peanut butter
1/2 C cocoa

Put it all in a bowl and mix with a hand mixer until smooth.
Drop onto baking stone with a  tablespoon or  cookie scoop.
Sprinkle on some sea salt,

Bake at 350° F for 8-10 minutes

Let cool 5 minutes on baking stone, then transfer to a plate to cool.

Pineapple Pulled Chicken ~Pressure Cooker Recipe

My Pineapple Pulled Pork is a huge hit in my house but its not always convenient to get an organic pork butt.  You can use boneless chicken thighs and make this in no time.  It is just as good.
This is great to have in your pressure cooker on keep warm for your football, birthday and holiday parties.

Pineapple Pulled Chicken (pressure cooker version)

Toss this all in the pressure cooker

3 lbs Boneless Chicken Thighs
1 C ketsup
1/3 C cider vinegar
1/2 C packed brown sugar (more or less, I am a junkie)
a handful of paprika
1 T pepper flakes
4 T worcestershire sauce
4 T drived minced garlic
salt
pepper
1 C pineapple juice or pineapple necter (goya)
1 Can crushed pineapple (you can use fresh and hit it in the food processor)
1/2 C molasses

Pressure Cook on on high for 25 minutes
Open the pressure cooker and pull chicken apart

Serve on a roll with coleslaw or eat it as is.

Now go put your feet up and have some tea....your family will think you cooked all day.


My favorite Pressure Cooker, at the time of writing this post, is the Instant Pot. Its affordable and has a stainless pot instead of non-stick crap..which is very important to my family.

I started about about a decade ago when my friend Deb Murray who was working for Wolfgang Puck sent me one of his models to try out, because I ran a Rice Cooker Group for him.  I immediately started a pressure cooker group and had 7000 active members.  We all shared recipes and learned so much together over the years.
I make a quick lasagna from raw noodles in no time, make mashed potatoes in it, in 8 minutes and they stay hot in there for everyone to come back for seconds..and hard boiled eggs in 6 mins that even eggs laid that day will slip out of the shell (and don't tell me your tricks to get eggs to peel..I have chickens, this is the only thing that works).  I will post these recipes coming up.  I have really been slacking.  My husband asked me last night, if something was on my blog because someone requested a recipe..I hadn't blogged yet.
Sorry..I am gonna try to be better about blogging them.
Please take my recipes and run with them.  You can make buffalo chicken barbq in this..which is like a buffalo chicken wing on a bun...just subbing out and in ingredients in this recipe.  Use your imagination....that is when the best recipes are created!!

Bujo~ Bullet Journaling: How to get started

Bullet Journaling aka BuJo

 For anyone interested in bullet journaling, here is a tutorial for beginners. You can get way more (or less) detailed than this, but its a starter for anyone who never heard of it.
Check out you tube and pinterest for ideas and lay outs.



What I like about bullet journaling is the commercial planners that I have purchased in the past, don't really cater to the subjects I would use and there are pages in commercials planners I never use. I have bought some really cool planners but still don't use 1/4 to 1/2 of the pages or scribble our their heading to make use of it.


You can make it as detailed as you like. If you enjoy it, and take your time, you can consider it a sort of meditation.




If you don't have time, you can buy one. There are many for sale made by some very creative people. Here is an inexpensive one and a great gift idea for the kids.


Unless your kid is creative (all kids are, aren't they). In this case, they have how to books.

Baked Crab Poppers (or salmon or tuna or even chicken)

 
recipe modified from original recipe source: Just a Pinch 
 This recipe originally uses crab meat, but for a poor man's version use tuna or salmon packets or even chicken.

Baked Crab Poppers (or salmon or tuna or even chicken)
Recipe makes 32 poppers
 Prep:20 Min
 Cook:10 Min
Method:Bake

1 c unseasoned Panko bread crumbs
1 c corn, canned
3 small mini red bell pepper
1 jalapeno pepper chopped (optional)
1/4 c green onion stems, finely chopped
16 oz jumbo lump crabmeat, drained (tuna, salmon and chicken work great too)
3/4 c Duke's mayonnaise
1 egg, lightly beaten
1 tsp coarsely ground black pepper
1/2 tsp salt
1 lemon
1/8 tsp cayenne pepper

Heat oven to 425 degrees. Spray cups of mini-muffin pan with non-stick cooking spray. Sprinkle cups with 1/2 cup of the bread crumbs, gently tapping and rotating to coat.

Finely chop bell pepper using the food chopper or manual food processor. Blot mixture dry with paper towel. Finely chop onion tops setting aside 1 teaspoon for garnish.

Combine corn, bell pepper, remaining onions, crabmeat (or chicken, salmon or tuna), 1/2 of the mayonnaise, egg, black pepper, and salt in the batter bowl. Mix well but gently to not break up the crabmeat too much. Sprinkle lightly with remaining Panko crumbs.

Divide mixture evenly among cups using the small or medium scoop. Bake 10 minutes or until golden brown. Remove pan from oven. Cool in pan 2 minutes and then remove from pan to stackable cooling rack.

Meanwhile juice lemon for sauce using lemon juicer. Combine juice, cayenne pepper, and remaining mayonnaise and mix well. Brush tops of crab cakes with sauce using chef's basting brush and top with reserved finely chopped onion tops.
